Thai Curry Coconut Rice Noodle Soup
Aromatic Thai-inspired soup with rice noodles in coconut curry broth.

Instructions

In a medium pot over medium heat add 2 Tbsp Avocado oil and onions. Cook the onions until tender (approx. 2 mins) Add garlic and red peppers, stir often and sprinkle with salt and pepper. Cook until just tender (approx. 3 mins)

In the meantime, heat a separate pot of water on high heat for the rice noodles (cook the rice noodles separately)

To the soup pot add the red curry paste and fry for 1 minute. Add coconut milk, soyaki sauce, chicken broth and fish sauce. Mix until well combined. Squeeze lime juice over soup and stir. Cover and simmer on low heat for 10 minutes.

Add rice noodles to boiling water and cook according to directions, drain into a colander, rinse with cold water and drain well.

Divide noodles into bowls, ladle soup mixture on top and cilantro and drizzle chili oil to taste (carefully it adds a lot of spice). Optional serve with lime wedge.
