Roasted Garlic Hummus
Creamy, rich, and packed with mellow roasted garlic flavor, this homemade hummus is delicious on its own or topped Mediterranean-style with fresh vegetables, olives, and feta.

Roast Garlic: Preheat oven to 400°F. Slice the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon olive oil and wrap in foil. Roast for 35–40 minutes, or until the cloves are soft and golden. Let cool slightly.

Squeeze the roasted garlic cloves into a food processor.

Add chickpeas, tahini, lemon juice, olive oil, salt, and pepper.

Process until smooth, adding cold water 1 tablespoon at a time until the hummus reaches your desired consistency.

Taste and adjust seasoning as needed.

Spread the hummus onto a serving platter or shallow bowl.

If desired, top with diced tomatoes, cucumber, Kalamata olives, red onion, and feta.
