Roasted Carrots over Whipped Feta
Roasted carrots layered over airy whipped feta and finished with golden, crispy garlic butter and fresh herbs. A simple dish that feels special on any table.

Preheat the oven to 425°F. Toss the carrots with olive oil, salt, and pepper. Arrange in a single layer on a baking sheet. Roast for 20–25 minutes, flipping once, until tender and caramelized.

Add the feta, Greek yogurt, olive oil, and black pepper to a food processor. Blend until smooth and airy, scraping down the sides as needed. Add additional olive oil if needed for a light, spreadable texture. Spread onto a serving plate or shallow bowl.

Heat the olive oil and butter in a small pan over medium heat. Add the garlic and red pepper flakes. Cook, stirring frequently, until the garlic is golden and crisp. Remove from heat immediately to prevent burning.
