Our Family's Macaroni Salad

There are some recipes that become part of a family's story, and this is one of them. This macaroni salad is our grandma's recipe, lovingly passed down to our mom, Alicia, and now to us. Instructions

    Dice celery and onion, chop parsley and drain pimento, and set all aside.

    Boil pasta according to package directions. Do not overcook. Drain pasta and rinse under cold water to stop cooking. Drain well, drizzle with olive oil and gently toss. Set aside to cool a bit while you make the dressing. It’s good to toss the pasta with dressing while it’s still warm, but not hot.

    Whisk together Mayonnaise, yellow mustard, apple cider vinegar, sugar, salt & pepper.

    Fold together all ingredients with dressing, cover and chill for at least 2 hours, but overnight is best. Garnish with remaining parsley before serving.
