Instructions

  1. 1

Preheat the oven to 350ºF and prepare a 9-inch round tart pan with a removable bottom by greasing with oil or butter.

  2. 2

Pit 1 pound of cherries into a bowl.

  3. 3

Place the crust into the tart pan and trim any excess of the edge.

  4. 4

Par bake your crust by baking for 15-18 minutes. Remove from the oven once it begins to brown.

  5. 5

While the crust bakes, whisk together ¾ cup heavy cream, 2 eggs, 1 teaspoon vanilla extract and 3 tablespoons granulated sugar.

  6. 6

Add 2 tablespoons all-purpose flour and whisk until well incorporated.

  7. 7

Arrange the pitted cherries over the crust base and slowly pour the cream filling evenly over the cherries.

  8. 8

Return the tart to the oven and bake 40-50 minutes until the filling is barely firm, still jiggling slightly in the center.

  9. 9

Cool completely on a wire rack and serve dusted with powdered sugar and fresh cherries.
