Buffalo Chicken Chili
A hearty Buffalo Chicken Chili with just the right amount of heat. Cozy, comforting, and perfect for sharing.

Instructions
- 1
Gather all the ingredients listed and prepare as instructed (roughly chop vegetables, grind chicken in food processor, measure seasonings, etc.).
- 2
Heat olive oil in a large pot or Dutch oven over medium heat. Add the ground chicken. Season lightly with salt and pepper and cook, breaking it up, until mostly cooked through, about 5 to 7 minutes.
- 3
Add the roughly chopped onion, carrots, celery, and bell pepper to the food processes - nearly puree then add to the pot. Cook for 2 to 3 minutes, stirring, just until slightly softened.
- 4
Add all remaining ingredients to the pot beans, tomatoes, Franks sauce, and spices.
- 5
Bring to a gentle simmer, then reduce heat to low. Cover and cook for 30 to 40 minutes, stirring occasionally, until thickened and flavorful.
- 6
Taste and adjust seasoning as needed. Serve hot with blue cheese crumbles, green onions, or a drizzle of ranch.
