Instructions
- 1
In a small saucepan, combine the frozen mixed berries and sugar over medium heat.
- 2
Stir together the cornstarch and water, then add the berries. Cook for 8-10 minutes, stirring occasionally, until thickened and jammy.
- 3
Stir in the lemon juice.
- 4
Transfer to a bowl and allow to cool completely.
- 5
Preheat the oven to 350°F.
- 6
In a small bowl, combine the flour, brown sugar, cinnamon, and salt.
- 7
Stir in the melted butter until crumbly.
- 8
Spread the mixture on a parchment-lined baking sheet. Bake for 10-12 minutes, or until lightly golden.
- 9
Cool completely, then break into small crumble pieces.
- 10
In a medium bowl, whisk together heavy cream, milk, sugar, vanilla extract, and salt until the sugar is mostly dissolved.
- 11
Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
- 12
Transfer ⅓ of the churned ice cream into a freezer-safe loaf pan. Spoon over some of the mixed berry swirl and sprinkle with crumble pieces. Repeat the layers two more times.
- 13
Use a knife to gently swirl the berries through the ice cream.
- 14
Cover and freeze for at least 4-6 hours, or until firm.
