For Earth Day, we wanted to share a few tiny kitchen habits that help us waste a little less. Small shifts that fit into everyday life can add up over time, and everything you need is already in your kitchen!

Fruit and Sweet Things

  • Citrus Peels: Lemon, orange, and grapefruit peels can be added to infused water or simmer pots. They add brightness to your home and make the most of what you already used.
  • Apple Cores: Apple scraps can become apple scrap vinegar by fermenting them in a jar with water and a bit of sugar. It takes time, but it is deeply satisfying.
  • Strawberry Tops: Save strawberry tops in the freezer until you have enough, then simmer them with sugar and water to make a simple strawberry syrup. Perfect for pancakes, yogurt, or cocktails.

Vegetable Scraps

  • Stock Bag: Carrot peels, onion ends, celery tops, and herb stems go straight into a freezer bag. When it is full, simmer everything for a homemade stock.
  • Broccoli Stems: Peel and slice broccoli stems for slaws, stir-fries, or soups. They are tender and flavorful once you give them a chance.
  • Corn Cobs: After cutting off the kernels, simmer the cobs for a naturally sweet corn broth. It is perfect for soups and risottos.

Bonus Hosting Habits

  • Leftover Wine: Pour leftover wine into ice cube trays and freeze for cooking. It is perfect for sauces and soups.
  • Coffee Grounds: Used coffee grounds help deodorize the fridge or can be added to compost or garden beds. Mixed with coconut oil they even make a great body scrub.
  • Half Lemons: After zesting or juicing, toss half lemons into the dishwasher for a natural clean and fresh scent. Smaller chunks can also go into the sink disposal to deodorize.
  • Empty Jars: Jam jars make great salad dressing shakers, cocktail vessels, or storage for small pantry items.
