Panzanella Salad
Ingredients:
3 tablespoons olive oil
1 small Sourdough bread - cut into 1-inch cubes (6 cups)
1 teaspoon sea salt
2 dozen cherry tomatoes
1 cucumber
1/2 red onion
10 large basil leaves, coarsely chopped
Thyme, Oregano, Parsley
1 dozen fresh mozzarella balls
Vinaigrette:
1 teaspoon finely minced garlic
1 teaspoon Dijon mustard
1/4 cup red wine vinegar
1/2 cup olive oil
Pinch of red pepper flakes
Salt and pepper to taste
Directions:
Chop all veggies, herbs and bread
Toss bread with olive oil and sea salt - bake in oven at 350 for about 15 minutes
Mix vinaigrette and pour over veggies, mozzarella and herbs
Let bread cool before mixing into salad
