Panzanella Salad

Ingredients:

  • 3 tablespoons olive oil

  • 1 small Sourdough bread - cut into 1-inch cubes (6 cups)

  • 1 teaspoon sea salt

  • 2 dozen cherry tomatoes

  • 1 cucumber

  • 1/2 red onion

  • 10 large basil leaves, coarsely chopped

    • Thyme, Oregano, Parsley

  • 1 dozen fresh mozzarella balls

Vinaigrette:

  • 1 teaspoon finely minced garlic

  • 1 teaspoon Dijon mustard

  • 1/4 cup red wine vinegar

  • 1/2 cup olive oil

  • Pinch of red pepper flakes

  • Salt and pepper to taste

Directions:

  • Chop all veggies, herbs and bread

  • Toss bread with olive oil and sea salt - bake in oven at 350 for about 15 minutes

  • Mix vinaigrette and pour over veggies, mozzarella and herbs

  • Let bread cool before mixing into salad

  • Enjoy!
