Olive Oil Cake with Mascarpone Frosting
Cake Ingredients
2 cups all-purpose flour
1¾ cups granulated sugar
1½ tsp kosher salt
½ tsp baking soda
½ tsp baking powder
1⅓ cups extra virgin olive oil
1¼ cups whole milk
3 large eggs
2 Tbsp orange zest
¼ cup fresh orange juice
¼ cup Grand Marnier
Frosting Ingredients
8 oz mascarpone cheese, chilled
1 cup confectioners' sugar
1 cup heavy whipping cream, chilled
1 Tbsp vanilla bean paste
~2 Tbsp sour cherry preserves (for topping)
Instructions
1. Bake the Cake
Preheat oven to 350°F.
Grease and line a 9-inch round baking pan with parchment.
In one bowl, whisk together: flour, sugar, salt, baking soda, baking powder.
In another bowl, combine: olive oil, milk, eggs, orange zest, orange juice, and Grand Marnier.
Gradually mix dry ingredients into wet until smooth.
Pour into prepared pan.
Bake for 1 hour, or until a toothpick in the center comes out clean.
Let cool for at least 30 minutes.
2. Make the Frosting
Whip heavy cream until stiff peaks form.
Add confectioners' sugar and vanilla bean paste — whip again.
Gently mix in mascarpone cheese and whip until smooth.
Chill frosting until ready to serve.
3. To Finish
Frost cooled cake generously.
Swirl cherry preserves on top.
Sprinkle with fresh orange zest.
Slice, serve, and enjoy every bite!
