Blueberry Muddy Buddies

Ingredients:

  • 3 tablespoons chocolate chips

  • 2 tablespoons creamy unsweetened peanut butter

  • 1 tablespoon coconut oil

  • 2 cups fresh blueberries

  • 3/4 cup powdered sugar

Directions:

  • Melt the chocolate chips, peanut butter, and coconut oil together in a large bowl, using either the microwave or a double boiler, until smooth.

  • Gently fold in the blueberries until they’re fully coated in the chocolate-peanut butter mixture.

  • Sprinkle powdered sugar over the coated blueberries, tossing lightly to ensure even coverage.

  • Spread the blueberries in a single layer on a parchment-lined baking sheet and refrigerate for about 1 hour, or until the chocolate has hardened.

  • Once set, enjoy immediately or store in an airtight container in the fridge for up to 1 week.
