Blueberry Muddy Buddies
Ingredients:
3 tablespoons chocolate chips
2 tablespoons creamy unsweetened peanut butter
1 tablespoon coconut oil
2 cups fresh blueberries
3/4 cup powdered sugar
Directions:
Melt the chocolate chips, peanut butter, and coconut oil together in a large bowl, using either the microwave or a double boiler, until smooth.
Gently fold in the blueberries until they’re fully coated in the chocolate-peanut butter mixture.
Sprinkle powdered sugar over the coated blueberries, tossing lightly to ensure even coverage.
Spread the blueberries in a single layer on a parchment-lined baking sheet and refrigerate for about 1 hour, or until the chocolate has hardened.
Once set, enjoy immediately or store in an airtight container in the fridge for up to 1 week.
