Cheese-y Bread
Ingredients
3 cups grated cheddar cheese
3 cups grated Monterey Jack cheese
1 cup cottage cheese, pureed until smooth
¾ cup mayonnaise
1 cup scallions, chopped (reserve ¼ cup for garnish)
1 cup pancetta, cooked and chopped
2 large French bread loaves
Directions
Preheat oven to 350°F.
Prepare the bread: Slice loaves lengthwise and lay each side flat on a baking sheet, cut side up.
Mix the filling: In a large bowl, combine cheddar, Monterey Jack, pureed cottage cheese, mayonnaise, scallions (reserving some for topping), and pancetta. Stir until evenly combined.
Spread generously over the bread halves, covering to the edges.
Bake for 15 minutes, until the cheese is fully melted and bubbling. Add a few extra minutes if needed for deeper golden spots.
Optional: Broil for 2–5 minutes for extra browning and a crisp, cheesy crust.
Finish & serve: Top with the reserved scallions, slice into pieces, and serve warm.
