Cheese Ball Bites

Ingredients

  • ⅓ cup sweetened dried cranberries, finely chopped

  • ⅓ cup toasted pecans, finely chopped

  • 1 teaspoon dried parsley

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • 8 oz goat cheese log or cheese of your choice

  • 16 rosemary sprigs, for topping

Directions

  1. Prepare the coating:
    In a small bowl, combine chopped cranberries, pecans, parsley, salt, and pepper.

  2. Form the goat cheese balls:
    Divide the goat cheese into 16 equal portions and roll each into a small ball.

  3. Coat and assemble:
    Roll each goat cheese ball in the cranberry-pecan mixture until evenly coated.

  4. Finish and serve:
    Skewer each ball with a pretzel stick or rosemary sprig for a festive presentation.
    Chill until ready to serve — perfect for appetizer boards or holiday grazing tables.
