Cheese Ball Bites
Ingredients
⅓ cup sweetened dried cranberries, finely chopped
⅓ cup toasted pecans, finely chopped
1 teaspoon dried parsley
½ teaspoon salt
¼ teaspoon pepper
8 oz goat cheese log or cheese of your choice
16 rosemary sprigs, for topping
Directions
Prepare the coating:
In a small bowl, combine chopped cranberries, pecans, parsley, salt, and pepper.Form the goat cheese balls:
Divide the goat cheese into 16 equal portions and roll each into a small ball.Coat and assemble:
Roll each goat cheese ball in the cranberry-pecan mixture until evenly coated.Finish and serve:
Skewer each ball with a pretzel stick or rosemary sprig for a festive presentation.
Chill until ready to serve — perfect for appetizer boards or holiday grazing tables.
