Blackberry Swirl Ice Cream

Vanilla Base Ingredients

  • 1 ½ cups whole milk

  • 1 ½ cups heavy whipping cream

  • ¾ cup granulated sugar

  • Pinch of salt

  • 1 teaspoon vanilla extract

Blackberry Compote

  • 1 cup blackberries

  • ¼ cup sugar

  • ½ tablespoon cornstarch or all-purpose flour

  • Optional: Crushed waffle cone pieces

Directions

  1. Make the Vanilla Base

    • In a bowl, combine the whole milk, heavy cream, sugar, salt, and vanilla.

    • Mix until the sugar is dissolved.

    • Pour into an ice cream maker and churn according to the manufacturer’s instructions.

    • Transfer to the freezer until you are ready to add in the blackberry compote.

  2. Prepare the Blackberry Compote

    • In a saucepan over medium heat, add the blackberries, sugar, and cornstarch.

    • Cook until the berries break down and the mixture thickens to your desired texture.

    • Remove from heat and cool completely in the refrigerator before adding to vanilla base.

  3. Assemble the Ice Cream

    • Once the vanilla ice cream has finished churning and the compote is fully cooled, gently swirl the blackberry mixture into the ice cream.

    • Fold in crushed waffle cone pieces if using.

  4. Freeze

    • Transfer the swirled ice cream to a container.

    • Freeze overnight before serving.
