Blackberry Swirl Ice Cream
Vanilla Base Ingredients
1 ½ cups whole milk
1 ½ cups heavy whipping cream
¾ cup granulated sugar
Pinch of salt
1 teaspoon vanilla extract
Blackberry Compote
1 cup blackberries
¼ cup sugar
½ tablespoon cornstarch or all-purpose flour
Optional: Crushed waffle cone pieces
Directions
Make the Vanilla Base
In a bowl, combine the whole milk, heavy cream, sugar, salt, and vanilla.
Mix until the sugar is dissolved.
Pour into an ice cream maker and churn according to the manufacturer’s instructions.
Transfer to the freezer until you are ready to add in the blackberry compote.
Prepare the Blackberry Compote
In a saucepan over medium heat, add the blackberries, sugar, and cornstarch.
Cook until the berries break down and the mixture thickens to your desired texture.
Remove from heat and cool completely in the refrigerator before adding to vanilla base.
Assemble the Ice Cream
Once the vanilla ice cream has finished churning and the compote is fully cooled, gently swirl the blackberry mixture into the ice cream.
Fold in crushed waffle cone pieces if using.
Freeze
Transfer the swirled ice cream to a container.
Freeze overnight before serving.
