Apricot Chipotle Chicken Skewers

Ingredients

  • 4 chicken thighs, cut into cubes

  • 4 chicken breasts, cut into cubes

  • Short wood skewers, soaked

  • ¼ cup butter

  • 4 cloves garlic, minced

  • 1 cup apricot preserves

  • ½ cup chipotle Tabasco hot sauce

  • ¼ cup soy sauce

  • ⅛ cup Worcestershire sauce

  • Salt & pepper

  • Garlic powder

  • Chopped chives, for garnish

Directions

  1. Preheat oven to 350°F.

  2. Season chicken cubes generously with salt, pepper, and garlic powder. Thread onto soaked skewers and place on a lined baking sheet.

  3. Bake for 30 minutes, until just cooked through.

  4. Make the sauce: In a saucepan, melt butter and sauté minced garlic. Add apricot preserves, hot sauce, soy sauce, and Worcestershire. Whisk and bring to a simmer until slightly thickened.

  5. Glaze & bake: Brush sauce over both sides of skewers, return to oven for 5 minutes. Repeat once more for an extra sticky finish.

  6. Serve warm, brushed with more sauce and sprinkled with chives.
