Apricot Chipotle Chicken Skewers
Ingredients
4 chicken thighs, cut into cubes
4 chicken breasts, cut into cubes
Short wood skewers, soaked
¼ cup butter
4 cloves garlic, minced
1 cup apricot preserves
½ cup chipotle Tabasco hot sauce
¼ cup soy sauce
⅛ cup Worcestershire sauce
Salt & pepper
Garlic powder
Chopped chives, for garnish
Directions
Preheat oven to 350°F.
Season chicken cubes generously with salt, pepper, and garlic powder. Thread onto soaked skewers and place on a lined baking sheet.
Bake for 30 minutes, until just cooked through.
Make the sauce: In a saucepan, melt butter and sauté minced garlic. Add apricot preserves, hot sauce, soy sauce, and Worcestershire. Whisk and bring to a simmer until slightly thickened.
Glaze & bake: Brush sauce over both sides of skewers, return to oven for 5 minutes. Repeat once more for an extra sticky finish.
Serve warm, brushed with more sauce and sprinkled with chives.
